These are not all utilities, but apps I find myself using the most on my iPhone and iPad Mini.

Prompt - the best SSH tool I've found is Prompt, clean, easy and works great.  Others I've tried just didn't work as smoothly.  I use this on my iPhone, little cramped on the smaller iPhone 4S screen, and on my iPad Mini.

SpeedTest.net - for the few times I need to test the speed of my connections.

Chrome for iOS - keeps my desktop / laptop bookmarks in sync with my iOS devices, as well as the history between all three devices AND I can see what tabs I left open on any of my devices from any of the other ones.

LogMeIn - allows me to remote control my Mac or Windows systems from my iPhone or iPad Mini.  I use this rarely and it's a little strange, but it works.

Dropbox - obvious

1Password - linked with Dropbox allows me to store all of my passwords on my all of my devices in an encrypted format with a single master password.

Fantastical - great calendar replacement program which uses the standard Calendar app data, so it still works with Exchange, CalDAV or any other calendar services you use with your iPod Touch.

Pocket - for all of those articles I mark that I want to "read later" from my desktop/laptop systems, or even from my iPhone / iPad.  It's just a fantastic software and service.

Podcasts - allows me to subscribe to podcasts and automatically updates them, but more importantly allows me to run the episode at 1.5x speed which is helpful for LONG talkers like the SecurityNow! podcast.

Things - I have two lists, the one in my head of things I don't get done because I forget about them and the other is in Things for the 98% of things I do get done.  I enter it, schedule it and forget about it until it reminds me.

Tweetbot - I'm not a Facebook guy really, and rarely do RSS anymore, but find that Twitter has become my replacement for news and happenings both world and local.  Tweetbot, in my opinion, is the best Twitter app there is available for iOS.  Multiple lists, muting of keywords, etc, etc.  I'll stop now.

Square - for accepting credit cards for my after-hours consulting business.

Freshbooks - for invoicing and expenses for my after-hours consulting business.

Google - single app serves as a "launching point" for all of the other Google services I use.  I'm trying out the Google Now integration that it has, but there seems to be a bug with it where it has your GPS on all the time and runs your battery down pretty quickly.
