Oscar, Having just upgraded our NT domain to 2003, I can say that the process for that was surprisingly easy and painless. For you, even less so as you already have Active Directory in place and functioning. The basic process for us was install NT, upgrade to 2003, and remove the NT controllers. For you, you would just join the 2003 box to the domain, run dcpromo to install Active Directory, and then run dcpromo on the 2000 box to demote it to a member server. Demoting the 2000 box will automagically transfer all the "Master" rolls like PDC emulator and the like to the new 2003 box. Should be painless. But I would probably run both as DCs just to have redundancy for at least authentication, and just transfer the services you want to the new machine.
