Purchase or lease copiers. Find out which company currently has the
campus X pennies per page contract and go with their multifunction
copier. They all have network connectivity now. The very latest drivers
are sometimes an issue. For instance Snow Leopard can't use the mailbox
features on a Canon iR3320. 
Make sure your service contract specifies what happens to the hard drive
at end of life. 

Copiers are built to take abuse and a copier tech is generally somewhere
on campus, every day.

Another good point.  HP's exceptionally bloated software is TERRIBLE!
I'll say again: TERRIBLE TERRIBLE TERRIBLE!  One office purchased a
multifunction model (NEVER buy one from HP, just an FYI) and it required
a 600MB driver package that only sort of worked.  Their drivers alone
aren't too bad, so if you go to their website, check for a Plug and Play
version of the driver that seems greatly slimmed down.  It might not
have their stupid monitoring programs to tell when your print is done,
but it's worth the savings and it's one less thing to stop working.

And indeed, our M does V...  The HP hardware still seems pretty solid,
but the software that gets installed with their hardware is junk, and we
gave up on HP products many years ago.  I would reconsider them if they
changed their software policies, but of course since I no longer install
HP stuff I will never know when that happens.  In the meantime, we have
found Dell printers to be a good choice overall; I myself have a Brother
that suits me just fine, but I don't know how that purchasing decision
got made (it was an extra that just happened to be on hand when I needed
it).
