We are using the classnet system in the Training lab in the Usability and Accessibility Center on campus http://www.minicom.com/cbt_twistaudio.htm The system is new and i have had limited exposure to this, but it works well for the scenario's you are describing. It allows the teacher to control the keyboard/mouse/monitor of any computer. Transmit the teacher's monitor to any computer and also send the output to the projector.
