Upgrade one to a few cooperative users and let them test every day features first. Make sure they can save where they are supposed to be able to save to and that you, or they, can backup their data properly.
We were going to do a roll out of Office 2007 last summer but our test users could not save to our SAN from inside Office applications. Admins had no such issues. Saving files to the desktop then moving them to the SAN worked fine. It took months of three ways calls and finger pointing between MS and the maker of the SAN management software before a solution was found.
