Working with the CIC we enabled Shibboleth-based authentication with Sharepoint amongst all of the CIC schools.  Travel.msu.edu is also being run (externally) as a shib-enabled sharepoint instance.  If you're looking for sharepoint, specifically, you might want to talk to 9star research, who "does this for a living."

A non-sharepoint example is cascade ( http://www.hannonhill.com/ )--also shib-enabled, which is currently being used in pilot for a few sites here at MSU.

I'm sure there are other examples, these just came to mind.
